(Almost) According to Delia: Oat and Raisin Cookies

I don’t do all the baking. Sometimes, M gets it into his head that he wants to make something, usually cookies, occasionally a Victoria sponge.

In a vague attempt at healthiness (I know), he’s been using Delia’s Oat and Raisin Cookie recipe. Only, he doesn’t like raisins, so they were switched for white chocolate chips (that being all I could find in the shop). And he added lemon zest and juice, because we had a lemon in the fridge. He’s made lots of variations since, most recently adding chocolate powder and not replacing the raisins with anything.

They’ve actually mostly been more rock cake than cookie, but still tasty. And, best of all, I didn’t have to make them. That’s the best sort of recipe!

Ingredients

75g butterOat and Chocolate Chip Cookies

1 large egg, beaten

175g dark brown soft sugar [granulated sugar]

200g medium oatmeal

110g wholemeal flour [plain flour]

Half tsp bicarbonate of soda

Half tsp salt [I’d use salted butter and skip this]

150g raisins [chocolate chips]

[juice and zest of one lemon]

Method

Gently melt the butter and allow to cool slightly before stirring in the beaten egg. Put the rest of the ingredients into a bowl and stir in the egg-butter mix until it’s a stiff paste.

Form into balls, about walnut sized, and place on a lined baking tray. Press them down slightly and bake at 180C/gas mark 4 for 16-18 minutes.
